There is a kind of dinner that doesn't repeat.
One table. Twenty guests. A single cut of beef that has waited 45 days in the dark to arrive at this night.
Executive Chef Juan Pablo Blanche cooks it in front of you, over live fire, and serves it himself. Three courses, one seating, one menu. When the last plate leaves the pass, the night is over and it will not happen again.
The Cut
Aged since June 27. Uncovered, on the rack, temperature and humidity controlled. Forty-five days in the cellar before it ever touches the fire.

Questions
- How long is the dinner?
- About two and a half hours. Doors at 6:00 PM, first course at 6:30.
- Is wine included?
- No. The chef selected three wines for the night, available by the glass or bottle, starting at $15 a glass.
- Can I come alone? Can I book for a group?
- Both. Seats are sold individually. Book as many as you'd like, up to the twenty available.
- Will we be seated with other guests?
- Yes. It's one seating, one shared table, one menu for everyone.
- What if I have a dietary restriction?
- Tell us when you book and we'll do what we can. The dinner is built around one cut of beef, so we don't have a vegetarian version this month.
- Can I choose how my beef is cooked?
- The chef serves it at the temperature the cut calls for. Let us know when you book if that's a problem for you.
- Is there a dress code?
- No. Come as you are.
- What if I can't make it?
- Payment is non-refundable within 72 hours of the event, but your seat is transferable — send someone in your place and let us know the name.
- Is parking available?
- Yes, on site at 5110 Poplar Avenue.
- Can I bring my kids?
- This one's built for adults — single seating, set menu, no substitutions.
- Will there be another one?
- Every month, on the 10th. A different country and a different fire each time. The next date is announced at the table.
